Tender slices of duck, granny smith apple, fire roasted red pepper, balsamic caramelized onion, dried currants, shredded cheddar and parmesan cheeses. Served with a smoked apple aioli.
Sandwich:
The Ted Nugent Bison Burger
A tender ½Lb. Bison burger topped with Pineapple,Mango,Bermuda onion, minced jalapeno, bacon, and Jicama. Served with French fries and coleslaw.
Entree:
Duck Breast with Orange Reduction
Duck breast seasoned with sea salt, and freshly ground black pepper is pan seared until golden and crispy, then oven roasted until slightly pink. Sliced thickly and served over pistachio wild rice pilaf with an orange-bing cherry reduction, our chef’s seasonal vegetable, and a breadstick.
Elk Loin Mixed Grill
Tender cubes of elk loin sautéed in olive oil with rosemary, garlic, carrot, sweet peas, onion, pepper, zucchini, and yellow squash. Served with Geno’s caramelized onion mashed potatoes in a thick veal demi glace.
